- 20 flounder filets
- 20 tablespoon K-Paul's Seafood Magic
- 1 cups flour
- 1 cups olive oil
- salt and black pepper, to taste

1. Heat the oil to 375 degrees in an electric skillet. You can use a regular skillet, but it's difficult to assure the temperature that way. |
2. Dump the flour into a container that is big enough to hold an entire flour. Mix in two to three tablespoons of the Seafood Magic into the flour. |
3. Generously sprinkle both sides of each filet with the Seafood Magic, followed by a dusting of the flour. Fry the filets three minutes on each side. Wait between batches for the oil temperature to come back to 375 degrees. |
4. Remove the fried flounder from the skillet and place on several sheets of paper towels to absorb the excess oil. |
5. Serve with lemon wedges. |
6. Note: If preparing ahead of time, tear several sheets of parchment paper or waxed paper the size of a roasting pan. Place a sheet in the pan and then place as many of the filets as will fit. Cover with another sheet and repeat. Put in a warm oven no hotter than 150 degrees. |
7. Makes 10 servings (2 filets per person). Adjust as needed. |
