  • 20 flounder filets
  • 20 tablespoon K-Paul's Seafood Magic
  • 1 cups flour
  • 1 cups olive oil
  • salt and black pepper, to taste

directions

1. Heat the oil to 375 degrees in an electric skillet. You can use a regular skillet, but it's difficult to assure the temperature that way.
2. Dump the flour into a container that is big enough to hold an entire flour. Mix in two to three tablespoons of the Seafood Magic into the flour.
3. Generously sprinkle both sides of each filet with the Seafood Magic, followed by a dusting of the flour. Fry the filets three minutes on each side. Wait between batches for the oil temperature to come back to 375 degrees.
4. Remove the fried flounder from the skillet and place on several sheets of paper towels to absorb the excess oil.
5. Serve with lemon wedges.
6. Note: If preparing ahead of time, tear several sheets of parchment paper or waxed paper the size of a roasting pan. Place a sheet in the pan and then place as many of the filets as will fit. Cover with another sheet and repeat. Put in a warm oven no hotter than 150 degrees.
7. Makes 10 servings (2 filets per person). Adjust as needed.
