- 1 lb. ground veal
- ½ lb. ground beef
- 1 onion
- 1 clove garlic
- ⅔ cups bread crumbs (panko)
- ¾ cups milk
- 2 eggs
- 2 tablespoons fresh parsley
- Salt and pepper to taste
Sauté onion until very light brown. Stir in garlic and saute another 30 seconds.
Add milk and eggs to bread crumbs and mix until bread soaks up milk completely. If bread is still dry, add more milk. It is better for the mixture to be moist rather than dry.
Combine meat, salt, and pepper, taste mixture for seasoning and adjust as needed. Alternatively, you can make a mini schnitzel, cook, and taste it for flavor.
Using an ice cream scoop, make into schnitzly shape then place into breadcrumbs.
Pour a tablespoon of oil into frying pan and heat until shimmering. Sear quickly (about a minute per side) and then put into a 350 degree oven for 7-8 minutes.
